on the 8th day of Christmas

On the 8th Day of Christmas my true love sent to me ....a really easy rumball recipe!

Throw a packet of milk arrowroot or milk coffee biscuits into the food processor.  Pulse. Add 1 can condensed milk, 3 tablespoons of rum, a big dollop of cocoa, a cup of coconut and a cup of sultanas (you can use less sultanas and some nuts but we know too many little people with nut allergies).  Hit pulse again and mix until very well combined.

Roll mixture into little balls and get the kids to roll in coconut.
These freeze well in a tupperware container so you can start getting festive in October and look super-organised in December!

Wouldn't you know it I looked up a similar recipe online on Sunday and thought I might make some, and then after battling the shops to finish off Xmas shopping, off to the pet store for turtle food and PH tank chemicals, to the library for work, and then to Woolies for food shopping I ended up conceding to buy some instead - and they're horrible. They're all smooth and yukky with no lovely crunchy or nutty parts, so I regret not making that extra effort. I might actually give these a shot. The recipe I had used vanilla wafer biscuits instead for added crunch. Koert reckons rum balls are never nutty or crunchy but I think he's nutty because my ideal rum ball always is! xxx sis
